Course Outline

This course will cover in detail how to effectively, develop, monitor and maintain a HACCP plan.

It Will Include:

Prerequisites- what they are and what is expected for implementation for each prerequisite
The 12 steps of HACCP based on CODEX- what is the intent of each step, with a deep dive on each step.
There will be in class assignments and group discussions to aid in understanding.
Delegates are welcome to bring their own HACCP plans or those in development to gain insights.
On the last day of the course there is an exam that requires an 80% pass mark.
